Sake is the traditional rice wine of Japan. It comes in several different varieties, and was first made at least 2,000 years ago. Since then, sake has played an important role in Japanese culture and history. Started as "drink of the Gods", it is Japanese national alcoholic drink nowadays the history of sake is steeped in tradition, innovation, and custom. It has always been the drink to celebrate special occasions and kin’s gatherings.
Different grades of sake
Junmai - no minimum milling ratio, pure rice sake, nothing added other than rice, water and yeast, round & versatile on palate
Ginjo – milling rate of 60% or less, refreshing, fruity & floral
Daiginjo – milling rate of 50% or less, delicate, complex & fragrant

Our sake flights are designed to provide new experience to the customers with the best quality sakes: each sake flight contains 3 different kinds of sake: food matching and style evaluation can be done at the table with relaxing pace. There will be a sake sommelier service available on the floor if required.

GINJO FLIGHT £14.50 (50ML EACH)
Ginjo often possess fruity and floral flavour nuances, and tend to be light and refreshing on the palate. To receive the ginjo designation a sake must use rice that has been milled down to 60% of its original size prior to steaming.

DAIGINJO FLIGHT £16.50 (50ML EACH)
Daiginjo take the rice polishing ratio down to 50% or less. They are made in smaller quantities, and rely more on traditional methods. Flavour and aroma profiles tend to be fuller than ginjos with complexity and finesse.
